Our Story

We are currently negotiating a space in West Ashley for our first location, and hope to open additional stores over the next 5 to 7 years. The citizens of and visitors to Charleston will benefit from a bagel bakery; we see a need waiting to be filled in a region that is rich with Jewish history, a rapidly growing population, and more than seven million annual visitors (pre-Pandemic) who create an annual economic impact of $8.1+ billion. There is a lack of a superior bagelry in Charleston and our intent is to fill that niche with delicious foods served in a welcoming setting, with a focus on breakfast and lunch. Bettina Fisher is building a BAGELRY in the Charleston, SC area! Hello Lowcountry!We currently deliver wholesale bagels to Community Supported Grocery, a local CSA/ artisanal delivery service. Additional customers are in the works. Blazing Star Cafe started as a part of the exploratory food court at The Workshop on Upper King Street, where it ran as a weekend pop-up from August 2020 to May 2021, an opportunity that provided time, space, and equipment to hone our recipes, refine menu selections, and develop a customer base. We will offer traditional bagels -- plain, sesame, onion, cinnamon raisin, and inside-out everything bagels -- and some more modern combos. Bialys will be in the rotation. We offer flavored cream cheeses such as scallion, veggie, and smoked salmon. The menu includes a full complement of hot and cold drinks, including French Press coffee and cold brew from Springbok, hot tea & cold chai, and a dessert menu which changes seasonally, and which will always includes babka.
